HACCP Regulations.


The HACCP Regulations is to be directly implemented into UK law from 01.01.06.

The new Food Hygiene Regulations 2005:

1. Full implementation of a food safety management system based on HACCP principles [Article 5 EC 182/2004]
2. Training of those senior staff responsible for implementing and maintaining [Chapter XII (ii)]
3. Training of employees in HACCP: [Preamble to EC 182/2004 Section 13]:

"Successful implementation of the procedures based on HACCP principles will require the full cooperation and commitment of food business employees. To this end employees should undergo training" (Preamble: Section 13 EC 182/2004).

For due diligence purposes, the food business will need to provide relevant documentation [Article 5 (g) EC 182/2004] that appropriate HACCP training has been provided for its employees, and demonstrate that the HACCP training given is reflected in employee working practices.

Intermediate Certificate in HACCP Principles [Royal Institute of Public Health].

This is a Level 2 qualification as indicated in the UK Industry Guides to Good Hygiene Practice. The qualification is aimed at all those senior staff concerned with the implementation of modern food safety management systems. The course is specifically designed for HACCP team members, as well as supervisors and managers throughout the food industry.

The qualification is achieved by a minimum of 18 guide learning hours. There is a single examination comprising of multiple-choice questions and short answer questions based on a case study.


Candidates receive a RIPH Intermediate Certificate in HACCP Principles.
Duration 18 hours minimum, price available on application.

Advanced Certificate in Applied HACCP Principles [Royal Institute of Public Health].

This is a Level 3 qualification as indicated in the UK Industry Guides to Good Hygiene Practice. It is aimed at all those involved in the implementation of modern food safety management systems. The qualification is specifically designed for HACCP team leaders, as well as supervisors and managers throughout the food industry.

The qualification requires a minimum of 30 hours guided learning, plus two written examinations.

Candidates receive a RIPH Advanced Certificate in Applied HACCP Principles.
Duration 30 hours minimum, price available on application.
