This little booklet is written to form part of your "due diligence". It contains three parts:-

a) The essential knowledge about the E-coli 0157 bacteria, its lifecycle and how to prevent it causing food borne illness.

b) A 20 question multi choice test to establish understanding and knowledge. If you have 15 out of 20 questions correct, a certificate will

c) An optional observation section. This is to be completed by the owner, manager or supervisor and records best practice in daily operations.
